Rolled Turkey Roast

Perfect for an intimate Thanksgiving dinner.

Serves 6


1.9kg Hogan's Farm Boned & Rolled Turkey
10 Wicks Manor Smoked Streaky Bacon
2 garlic cloves, crushed
100g butter, softened


  1. Preheat the oven to 200°C.
  2. Combine the garlic and butter. Season, then rub over the turkey breasts.
  3. Stretch the bacon slices over the turkey, overlapping them a little. Tie the roll together with string, spacing knots 5cm apart.
  4. Put on a large wire rack over a large roasting tin.
  5. Roast for 1.5 hours or until the juices run clear when a skewer is inserted into the thickest part of the turkey.
  6. Transfer the turkey to a board, cover loosely with foil and rest for about 20min before carving.
  7. Serve with vegetables, sauces and stuffing of your choice.
