35g Pumpkin Seeds
30g Maple Syrup
1 tsp Smoked Paprika

85g Mixed Greens
1 Apple, sliced thinly
1 Avocado, sliced
150g Pomegranate Seeds
60g shaved Parmigiano Reggiano Cheese
Dressing
80g Olive OIl
60g Apple Cider Vinegar
10g Dijon Mustard
30g Honey
15g Cranberry Jam
1 tsp Orange Zest
Sea Salt
Pepper
Chilli Flakes
METHOD
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, toss the walnuts and pumpkin seeds with honey or maple syrup, chipotle chilli powder, and a pinch of salt.
3. Spread the nuts in an even layer on the baking sheet. Bake for 10-15 minutes, stirring once halfway through, until golden and fragrant.
4. Remove from the oven, sprinkle with flaky salt, and let cool completely.
5. In a large salad bowl, combine the mixed greens.
6. Add the chopped apple or pear, avocado slices, pomegranate arils, and cheese.
7. Top with the sweet and spicy nuts. Gently toss to mix.
8. In a small jar, combine all the dressing ingredients. Shake well until fully emulsified.
9. Drizzle the dressing over the salad and toss gently to coat. Enjoy!
