Ingredients
- 3kg Fox River Whole Chicken
- 3/4 cup Organic Chicken Bone Broth
- 120g Butter, softened
- 2 tbsp Fresh Parsley, finely chopped
- 1 tbsp Fresh Chives, finely chopped
- 3 tbsp Confit Garlic and Onion
- 2 tsp Salt
- 1 tsp Black Pepper
Instructions
- Preheat oven to 180°C
- To make garlic-herb butter, mix soft butter, garlic confit, chopped parsley, and chives in a bowl.
- Massage the garlic-herb butter onto the chicken.
- Place the marinated chicken in a roasting dish with chicken broth.
- Roast for 2-2.5 hours, while basting the buttery broth over the chicken halfway through.
- The finished broth is also perfect for cooking Lua Tua Pasta, making it a perfect complementary side dish to your centerpiece!
