Ingredients
- 3kg Fox River Whole Chicken
- 300g Wicks Manor Sausage Meat
- 1 Apple, peeled and diced (about 150g)
- 1 Onion, diced and sauteed (about 120g)
- 1 tbsp Fresh sage, chopped
- 1 tbsp Thyme, chopped (split into two portions)
- 1 cup Bread Crumbs
- 2 tbsp Extra Virgin Olive Oil (1 tbsp for sauteing)
- 2 tsp Salt
- 1 tsp Black Pepper
Instructions
- Preheat the oven to 180°C.
- In a bowl, mix sausage meat, diced apples, sautéed onions, breadcrumbs, and herbs.
- Stuff cavity generously.
- Rub chicken with olive oil, the other half of the thyme, salt & pepper.
- Roast at 180°C for 2 hrs 20 mins, until stuffing reaches a safe temperature.
- Let it rest for about 20 minutes. Slice, serve with stuffing tumbling out warmly.
