1/2 Iceberg Lettuce or a mixed leaf salad
Pesto sauce
Lime juice
230gm Haloumi cheese
1 Avocado
Vasse Virgin Mild and Delicate Extra Virgin Olive Oil

METHOD
- Slice up the lettuce (if using) into 1cm strips and slice up the avocado any way you prefer.
- Slice up the haloumi into thin strips and fry in the olive oil for approximately four minutes on either side or until golden brown.
- In a bowl, mix together the lettuce (or mixed leaf salad), the pesto, and avocado. Toss in the strips of haloumi and squeeze the lime juice over the top.
