Turkey Cobb Salad

A light, healthy and refreshing meal that works great after all the holiday feasting! 

Serves 2

INGREDIENTS
SALAD
180 g baby spinachlamb's lettuce or salad greens
4 strips cooked bacon, crumbled
240g leftover turkey, cubed or shredded 

140g roasted butternut pumpkin, cubed
2 hard boiled eggs, quartered
57 g crumbled goat cheese
2 tablespoons dried cranberries or cubed apples
2 tablespoons cashews or almonds, roughly chopped


APPLE CIDER VINAIGRETTE
72g olive oil
60g apple cider vinegar
1 tablespoon honey
1/2 teaspoon Dijon mustard
1 clove garlic, minced
salt and pepper, to taste

METHOD
  1. Mix together the apple cider vinaigrette ingredients in a small bowl.
  2. In a large salad bowl, layer the spinach with bacon, turkey breast, roasted butternut pumpkin, boiled eggs, cranberries, pecans, and goat cheese. Drizzle the apple cider vinaigrette on top and enjoy.
