This sashimi-grade salmon fillet has a firm, muscular texture and a clean, smooth flavour. Boneless, skin on, whole and un-portioned. 

Mt. Cook Alpine King Salmon is raised in the pristine, fast-flowing, fresh glacial waters of New Zealand's Southern Alps. The strong, highly oxygenated currents keep these beautiful fish fit, healthy, and lean. This sashimi-grade Alpine King Salmon has a firm, muscular texture with a clean, smooth flavour. Fresh, skin-on Alpine Salmon fillet with the pin bones removed and individually vacuum packed for freshness.

We receive our fresh salmon every Wednesday night, and it is available for delivery from midday on Thursdays, when it is at its freshest. The size of salmon can change seasonally. We may, therefore, contact you on the day of delivery to let you know and either offer you a partial refund (if it's smaller) or request a top up (if it's bigger).

I had the pleasure of visiting the farm for the second time in June 2018 and I hope you enjoy this video of my visit. Unfortunately, nature was against us as the sound of the high winds made recording voices tricky, but the video will, I hope, bring you closer to the source of this beautiful product.

Food Safety

While our salmon is fantastic for sushi, the consumption of raw food products may increase your risk of food-borne illnesses. It is up to the individual to eat it raw. Please consume the product prior to the 'best before' date, as this is when the fish is at its best quality. If you do not intend to eat the salmon within 2-3 days of delivery, we recommend you freeze it, to seal in the freshness.

While Mt Cook have tried to remove all the bones, please be careful just in case they've missed one.
