Surprisingly fresh
I often don't buy eggplant in Singapore as it is often tasteless. This is very fresh and tasted like eggplant should taste. Good price as well.

To remove any bitterness and help the eggplant hold its shape, brine in salt water for 30 minutes before cooking.
