
Lamb Leg. This boneless lamb is extremely tender, GMO-free and free range. Grass fed lamb, the way it used to be farmed by 3rd generation farmers. It has a mellow flavour, and melts in the mouth. A tender cut of meat perfect for a family meal. Available in different weights.
Roll the lamb and use butcher's twine to tie it together. Place the lamb on the roasting rack along with fresh herbs (e.g. thyme and rosemary)
Time to roast leg of lamb:
- Medium Rare: approx., 20 mins per 500g until internal temperature is around 54°C
- Medium: approx. 23 mins per 500g until internal temperature is around 58°C
- Medium Well: approx. 25 mins per 500g until internal temperature is around 62°C
- Well Done: approx. 30 mins per 500g until internal temperature is around 71°C

It all began at the end of World War I, when Brian Everton senior, the current farmers' grandfather was awarded a ballot farm in Foxton after returning from Service. It was here that their family passion for providing quality meat to local families began.
Over the years the business grew to include several butcher shops across the Wellington region, and an innovative home delivery service. In 2002, the family saw an opportunity to continue the legacy of their Grandfather, establishing Cabernet Foods, a cooperative that works with local farmers raising livestock to their full potential.
