Enoki mushrooms, or golden needle mushrooms, have a delicate, savoury flavour with a subtle crunch from the stems. They're delicious when added to hotpots, ramen or soups, but can also be blanched, sauteed or steamed. Trim about 1-inch of the roots, give them a rinse, and they are ready to be used.
