Wild swordfish fished from the pristine waters off the west coast of the South Island of New Zealand. Caught by local New Zealand fishermen, using surface long-line methods that do not damage the sea bed, with virtually no non-fish by-catch. Swordfish migrational patterns and New Zealand's strict quota management system for their fisheries makes the swordfish harvesting season very short, only from March to August.
