Hand reared on a certified organic diet, the combination of an unparalleled environment, pristine location and a team passionately driven by quality and flavour makes this a show-stopping product.   

The flavour of this carefully sliced smoked halibut is delicate and subtle, best described by famous Scottish foodie Chris Berry (Scrumptious Scran) who shares, "The flesh was pearly, glistening and sweet – almost with a flavour reminiscent of scallops. It carried a beautiful subtly smoky accent, like a really good whisky. Hardly surprising given that the fish are smoked with chips made from the oak barrels sourced from Islay’s Kilchoman distillery...".  

How best to serve this? It is perfect served as is, sliced on fresh bread/crackers, in a salad, tossed in pasta or for something with more pizazz, Chris has created a beautiful recipe for Carpaccio of Smoked Halibut (watercress, radish, beetroot, dill tossed in lemon juice and olive oil) which will make a stunning starter.
