Our Iberico Pork Rack (Bone-In) boasts a uniquely succulent and marbled meat, with a subtle texture that melts in your mouth. Marinade: Garlic, thyme, chilli, olive oil, rum (optional), salt

  • Defrost overnight, then rub in marinade to fleshy side for at least 30 mins
  • For optimal results, bring meat up to room temperature before cooking
  • Barbecue on low to medium heat for 90 mins to 2 hours, turning occasionally
  • Alternatively, oven roast at 180°C/350°F, allowing roughly 25 mins per kg/20 min per lb
  • Serve when internal temperature reaches 63°C/145'F
