This lamb tenderloin is extremely tender. It has a mellow flavour, and melts in the mouth. The best way to appreciate this fine cut is cooking it rare to medium rare.

Our sheep are lovingly raised on pasture at a coastal Marlborough farm in the South Island of New Zealand.
