Ingredients
Chicken Patties
- 300g minced chicken (thigh preferred)
- 1 small garlic clove, grated
- 1 tbsp finely chopped parsley
- 1 tsp chopped fresh oregano (or ½ tsp dried)
- Zest of ½ lemon
- 1 tbsp finely grated onion
- ½ tsp ground cumin
- Salt & black pepper
- 1 tbsp olive oil (for cooking)
Whipped Lemon Feta Yogurt
- ⅓ cup Greek yogurt
- 2 tbsp crumbled feta
- 1 tsp lemon juice
- ½ tsp olive oil
- Pinch black pepper
Mediterranean Relish
- ½ cup diced cucumber
- ¼ cup diced tomato (seeds removed)
- 1 tbsp finely diced red onion
- 1 tsp olive oil
- 1 tsp lemon juice
- Pinch salt
- Optional chopped mint
To Assemble
- 2 brioche buns
- Handful baby arugula
Instructions
- Mix minced chicken with garlic, parsley, oregano, lemon zest, grated onion, cumin, salt, and pepper.
- Form into 2 patties and chill 15–20 minutes if possible.
- Heat olive oil in a pan over medium heat. Cook patties 4–5 minutes per side until golden and cooked through. Rest briefly.
- Mix yogurt, feta, lemon juice, olive oil, and pepper until smooth.
- Combine cucumber, tomato, red onion, olive oil, lemon juice, salt, and mint.
- Toast buns lightly. Spread lemon feta yogurt on the bottom bun, add chicken patty, spoon over relish, top with arugula, and close.
