Mediterranean Herb Chicken Burger

Ingredients

Chicken Patties

  • 300g minced chicken (thigh preferred)
  • 1 small garlic clove, grated
  • 1 tbsp finely chopped parsley
  • 1 tsp chopped fresh oregano (or ½ tsp dried)
  • Zest of ½ lemon
  • 1 tbsp finely grated onion
  • ½ tsp ground cumin
  • Salt & black pepper
  • 1 tbsp olive oil (for cooking)

Whipped Lemon Feta Yogurt

  • ⅓ cup Greek yogurt
  • 2 tbsp crumbled feta
  • 1 tsp lemon juice
  • ½ tsp olive oil
  • Pinch black pepper

Mediterranean Relish

  • ½ cup diced cucumber
  • ¼ cup diced tomato (seeds removed)
  • 1 tbsp finely diced red onion
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Pinch salt
  • Optional chopped mint

To Assemble

  • 2 brioche buns
  • Handful baby arugula

Instructions

  1. Mix minced chicken with garlic, parsley, oregano, lemon zest, grated onion, cumin, salt, and pepper.
  2. Form into 2 patties and chill 15–20 minutes if possible.
  3. Heat olive oil in a pan over medium heat. Cook patties 4–5 minutes per side until golden and cooked through. Rest briefly.
  4. Mix yogurt, feta, lemon juice, olive oil, and pepper until smooth.
  5. Combine cucumber, tomato, red onion, olive oil, lemon juice, salt, and mint.
  6. Toast buns lightly. Spread lemon feta yogurt on the bottom bun, add chicken patty, spoon over relish, top with arugula, and close.
