Ingredients
- 350g baby back ribs
- Salt & black pepper
Honey Glaze
- 2 tbsp honey
- 1½ tbsp soy sauce
- 1 tbsp ketchup
- 1 tsp apple cider vinegar or lemon juice
- 1 clove garlic, finely minced
- Optional: pinch of chilli flakes or smoked paprika
Instructions
- Preheat oven to 160°C (fan 150°C).
- Season the ribs lightly on both sides with salt and pepper. Place them on a large sheet of foil and wrap tightly to seal.
- Place the wrapped ribs on a baking tray and cook in the oven for 1½–2 hours, until very tender and the meat pulls easily from the bone.
- While the ribs cook, combine all glaze ingredients in a small saucepan. Simmer gently for 3–4 minutes until slightly thickened. Set aside.
- Remove the ribs from the oven and carefully unwrap. Brush generously with the honey glaze.
- Increase oven temperature to 220°C (or grill setting) and return ribs to the oven uncovered for 8–10 minutes, brushing once more halfway, until sticky and caramelised.
- Rest for a few minutes, then slice between the bones and serve warm.
