Sticky Honey Baby Back Ribs

Ingredients

  • 350g baby back ribs
  • Salt & black pepper

Honey Glaze

  • 2 tbsp honey
  • 1½ tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tsp apple cider vinegar or lemon juice
  • 1 clove garlic, finely minced
  • Optional: pinch of chilli flakes or smoked paprika

Instructions

  1. Preheat oven to 160°C (fan 150°C).
  2. Season the ribs lightly on both sides with salt and pepper. Place them on a large sheet of foil and wrap tightly to seal.
  3. Place the wrapped ribs on a baking tray and cook in the oven for 1½–2 hours, until very tender and the meat pulls easily from the bone.
  4. While the ribs cook, combine all glaze ingredients in a small saucepan. Simmer gently for 3–4 minutes until slightly thickened. Set aside.
  5. Remove the ribs from the oven and carefully unwrap. Brush generously with the honey glaze.
  6. Increase oven temperature to 220°C (or grill setting) and return ribs to the oven uncovered for 8–10 minutes, brushing once more halfway, until sticky and caramelised.
  7. Rest for a few minutes, then slice between the bones and serve warm.
