BBQ Lamb Kofta Skewers with Yogurt-Herb Sauce

INGREDIENTS

For Koftas: 
500g minced lamb
1/2 red onion, finely grated
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp cinnamon
1 tbsp chopped parsley
Salt & pepper
Skewers (soaked in water if wooden)

For the yoghurt sauce:
1/2 cup Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 small garlic clove, grated
2 tbsp chopped fresh mint or dill
Salt and pepper to taste

METHOD

 

  1. Mix all kofta ingredients. Form into small oval patties and thread onto skewers.

  2. Preheat grill to medium. Grill koftas for 3–4 minutes per side, turning until cooked through and nicely charred.

  3. While grilling, mix all sauce ingredients in a small bowl.

  4. Serve koftas with yoghurt sauce, grilled lemon, and warm pita (we recommend our Upgrain pita for a healthier option).
