Barramundi Pepper Compote with Lemon

Ingredients

250g of barramundi fillet
1 red bell pepper, roasted, peeled, seeded and julienned
1 yellow bell pepper, roasted, peeled, seeded and julienned
1 green pepper, roasted, peeled, seeded and julienned
1/2 cup of olive oil
5 tablespoons of lemon
1 teaspoon of sea salt
1/2 teaspoon of freshly ground black pepper

Method

1. Score the barramundi fillet
2. Add a pinch of salt on both sides of the barramundi fillet
3. Oil the bamboo steamer basket to prevent fillet from sticking, and place fillet in the steamer
4. Steam for 10 to 12 minutes with lid on
5. Remove fish from steamer
6. Mix all of the dressing ingredients in a large bowl
7. Spread pepper compote on a serving plate
8. Heat 2 tablespoons of peanut oil in a pan until smoking
9. Place fillet on top of pepper compote, then carefully drizzle with hot peanut oil
