Ingredients
500g Pasta of choice
150g Bacon
1/2 Onion
3 Cloves Garlic
2 cups of Butternut Squash
1 cup Parmesan, freshly grated
1/4 Heavy Cream
2 tbsp Thyme
2 tbsp Rosemary
1 Parsley
From Your Pantry
3 tbsp Olive Oil
Salt
Pepper
Instructions :
- Preheat the oven to 200 degree celsius. Coat butternut squash in olive oil, garlic, thyme red pepper flakes, salt and pepper.
- Bake for 30 minutes and transfer everything to a blender and mix till a soft puree forms.
- Saute bacon until crispy. Drain and use the excess oil to saute onion and garlic until soft and fragrant.
- Boil pasta of choice till al dente.
- Add squash puree to a large pan, add pasta water and heavy cream. Toss in cooked pasta until the sauce thickens and emulsifies.
- Plate the pasta and top with bacon.
