Butternut Squash Pasta

Ingredients
500g Pasta of choice
150g Bacon
1/2 Onion
3 Cloves Garlic
2 cups of Butternut Squash
1 cup Parmesan, freshly grated
1/4 Heavy Cream
2 tbsp Thyme
2 tbsp Rosemary
1 Parsley

From Your Pantry 
3 tbsp Olive Oil
Salt
Pepper

Instructions :

  1. Preheat the oven to 200 degree celsius. Coat butternut squash in olive oil, garlic, thyme red pepper flakes, salt and pepper. 
  2. Bake for 30 minutes and transfer everything to a blender and mix till a soft puree forms. 
  3. Saute bacon until crispy. Drain and use the excess oil to saute onion and garlic until soft and fragrant. 
  4. Boil pasta of choice till al dente. 
  5. Add squash puree to a large pan, add pasta water and heavy cream. Toss in cooked pasta until the sauce thickens and emulsifies. 
  6. Plate the pasta and top with bacon.
