Crispy Beer-Battered Snow Cod

Ingredients

  • 2 snow cod fillets (130g each)
  • 120g plain flour, plus extra for dusting
  • 1 tsp baking powder
  • ½ tsp salt
  • 180–200ml ice-cold lager or beer
  • Neutral oil, for deep frying
  • Lemon wedges, to serve

Method

  1. Heat oil in a deep pot or fryer to 180°C.
  2. In a bowl, whisk flour, baking powder and salt. Gradually add cold beer until a thick but pourable batter forms.
  3. Pat fish dry and lightly dust with flour, shaking off excess.
  4. Dip each fillet into the batter, allowing excess to drip off.
  5. Carefully lower into hot oil and fry for 4–5 minutes until deeply golden and crisp.
  6. Remove and drain on a rack or paper towels. Season lightly with salt.

To serve: Serve immediately with thick-cut chips, tartare sauce and lemon. Best enjoyed hot and freshly fried.
