Ingredients
- 2 snow cod fillets (130g each)
- 120g plain flour, plus extra for dusting
- 1 tsp baking powder
- ½ tsp salt
- 180–200ml ice-cold lager or beer
- Neutral oil, for deep frying
- Lemon wedges, to serve
Method
- Heat oil in a deep pot or fryer to 180°C.
- In a bowl, whisk flour, baking powder and salt. Gradually add cold beer until a thick but pourable batter forms.
- Pat fish dry and lightly dust with flour, shaking off excess.
- Dip each fillet into the batter, allowing excess to drip off.
- Carefully lower into hot oil and fry for 4–5 minutes until deeply golden and crisp.
- Remove and drain on a rack or paper towels. Season lightly with salt.
To serve: Serve immediately with thick-cut chips, tartare sauce and lemon. Best enjoyed hot and freshly fried.
