Pork Enoki Roll Rice Bowl

Ingredients

For Enoki Rolls

For the Sauce 

  • 100ml Water
  • 1 tsp Dashi Powder
  • 2 tbsp Soy Sauce
  • 1 tbsp Sugar
  • ½ tsp Pepper
  • 1 tbsp Oil

To Serve

  • 1 stal Scallion, thinly sliced
  • 1 tbsp Sesame Seeds
  • 1 bowl Japanese White Rice

Instructions

  1. Divide the enoki mushrooms into small bundles, then wrap each bundle with a slice of pork.
  2. In a small bowl, combine water, dashi powder, soy sauce, sugar, and pepper to make the sauce. Set aside.
  3. Beat the eggs in a separate bowl and set aside.
  4. Heat oil in a pan over medium heat. Add the sliced onion and cook until caramelized, about 5–10 minutes.
  5. Place the pork enoki rolls in a single layer in the pan. Pour the sauce over the rolls, cover with a lid, and simmer for 3 minutes.
  6. Pour the beaten eggs evenly over the rolls and simmer for another 2 minutes, until just set.
  7. Serve hot over a bowl of white rice. Garnish with scallions and sesame seeds.
