
Ingredients
For Enoki Rolls
- 150g Pork Shabu Shabu Slices
- 100g Enoki Mushrooms
- ½ Onion, thinly sliced
- 2 Eggs
For the Sauce
- 100ml Water
- 1 tsp Dashi Powder
- 2 tbsp Soy Sauce
- 1 tbsp Sugar
- ½ tsp Pepper

1 tbsp Oil
To Serve
- 1 stal Scallion, thinly sliced
- 1 tbsp Sesame Seeds
- 1 bowl Japanese White Rice
Instructions
- Divide the enoki mushrooms into small bundles, then wrap each bundle with a slice of pork.
- In a small bowl, combine water, dashi powder, soy sauce, sugar, and pepper to make the sauce. Set aside.
- Beat the eggs in a separate bowl and set aside.
- Heat oil in a pan over medium heat. Add the sliced onion and cook until caramelized, about 5–10 minutes.
- Place the pork enoki rolls in a single layer in the pan. Pour the sauce over the rolls, cover with a lid, and simmer for 3 minutes.
- Pour the beaten eggs evenly over the rolls and simmer for another 2 minutes, until just set.
- Serve hot over a bowl of white rice. Garnish with scallions and sesame seeds.
