
Ingredients:
- 70g miso
- 55ml mirin
- 55ml sake
- 35g sugar
- 2 tbsp olive oil
- 2 Twin pack Mt Cook Salmon fillets
Instructions:
- Prepare the Marinade: In a small saucepan, combine the mirin and sake. Bring to a boil and let it simmer for about 10 minutes to cook off the alcohol.
- Stir in the sugar and miso paste. Cook for another 2 minutes while stirring constantly, ensuring everything is well combined. Be careful not to let it boil. Once combined, remove from heat and let it cool completely.
- Place the Mt Cook Salmon fillets in a shallow dish. Pour the miso mixture over the salmon, making sure the fillets are generously coated.
- Cover the dish tightly with plastic wrap or a lid and marinate the fish in the fridge for 24 hours to absorb the flavors.
- Preheat your broiler to 220°C (or high heat if using a gas oven).
- Place the salmon fillets on an oiled broiler-safe pan or baking sheet, skin-side down. Broil for 7 minutes, but keep an eye on the fish as cooking times may vary depending on your oven. The salmon should have a beautiful caramelized finish with a golden color on top.
- Once the salmon is cooked to your liking, remove from the oven and serve immediately. Pair with steamed rice, sautéed vegetables, or a fresh salad for a delicious, restaurant-style dish!
