Nobu Style Miso Salmon

Nobu Style Miso Salmon

Ingredients:

  • 70g miso
  • 55ml mirin
  • 55ml sake
  • 35g sugar
  • 2 tbsp olive oil
  • 2 Twin pack Mt Cook Salmon fillets

Instructions:

  1. Prepare the Marinade: In a small saucepan, combine the mirin and sake. Bring to a boil and let it simmer for about 10 minutes to cook off the alcohol.
  2. Stir in the sugar and miso paste. Cook for another 2 minutes while stirring constantly, ensuring everything is well combined. Be careful not to let it boil. Once combined, remove from heat and let it cool completely.
  3. Place the Mt Cook Salmon fillets in a shallow dish. Pour the miso mixture over the salmon, making sure the fillets are generously coated.
  4. Cover the dish tightly with plastic wrap or a lid and marinate the fish in the fridge for 24 hours to absorb the flavors.
  5. Preheat your broiler to 220°C (or high heat if using a gas oven).
  6. Place the salmon fillets on an oiled broiler-safe pan or baking sheet, skin-side down. Broil for 7 minutes, but keep an eye on the fish as cooking times may vary depending on your oven. The salmon should have a beautiful caramelized finish with a golden color on top.
  7. Once the salmon is cooked to your liking, remove from the oven and serve immediately. Pair with steamed rice, sautéed vegetables, or a fresh salad for a delicious, restaurant-style dish!
