Festive Fish Pie

Indulge in the festive spirit with this hearty fish pie, featuring succulent salmon, tender cod, and juicy prawns in a creamy sauce. Topped with smooth mashed potatoes, vibrant peas, and a golden cheddar cheese crust, this comforting dish is perfect for the season. Ideal for sharing, it's a deliciously rich and warming centerpiece for any holiday table.


INGREDIENTS

2 Mount Cook salmon fillets, 300g
1–2 cod fillets, 250g
10 king prawns, 300g
3 tbsp (45g) butter, divided
3 tbsp (45ml) double cream
600ml full-fat milk
150g grated mature cheddar cheese, divided
2 tbsp cornflour mixed with 2 tbsp cold water
150g peas, sweet corn, and carrots
Chopped chives, for garnish
Salt and pepper, to taste


METHOD

1. Peel and boil potatoes in salted water for about 15 minutes, or until tender.

2. Drain, then mash using a masher or ricer.

3. Stir in 1.5 tbsp (22g) butter, the double cream, and a pinch of salt and pepper. Set aside.

4. In a saucepan, heat the full-fat milk over medium heat. Add the salmon fillets and cod, allowing them to cook for 3 minutes.

5. Add the prawns and cook for an additional 1 minute. Remove the fish and prawns from the milk and set aside to cool slightly.

6. Once cooled, remove the skin from the fish fillets if necessary. Reserve the milk, pouring it into a separate container to use later.

7. In the same saucepan, melt the remaining 1.5 tbsp (22g) butter.

8. Pour in the reserved milk, then stir in the cornflour mixture to thicken the sauce.

9. Add the frozen peas, sweet corn, and carrots, stirring to combine.

10. Turn off the heat, add 100g of grated cheddar cheese, and season with salt and pepper to taste.

11. Preheat the oven to 200°C (392°F).

12. In a baking dish, arrange the fish and prawns evenly across the bottom. Pour the creamy sauce over the top, ensuring it covers the seafood.

13. Spoon the mashed potatoes over the sauce, smoothing it out evenly. Use a fork to create a lined pattern on the top.

14. Sprinkle the remaining 50g of grated cheddar cheese over the mashed potatoes.

15. Place the dish in the oven and bake for 20 minutes, or until the top is golden and bubbling.

16. Garnish with chopped chives and any additional seasoning as desired. Serve warm and enjoy!
