  1. Begin by seasoning your lamb generously with your favorite BBQ seasoning.
  2. Let the seasoned lamb rest for 20-30 minutes before proceeding to grill.
  3. Sear off the lamb tenderloin on all sides to achieve a beautiful crust and lock in the juices.
  4. Move the seared lamb over to indirect heat on the grill until it reaches an internal temperature of 130 degrees
  5. Once cooked, allow the lamb to rest for 20-25 minutes to ensure optimal juiciness and tenderness.
  6. After resting, slice up your perfectly cooked lamb into desired portions.
  7. Drizzle a generous amount of homemade Tzatziki sauce over the top of the lamb. Sprinkle a pinch of finishing salt over the lamb slices to elevate the flavors.
