Sausage and Orzo Pasta

Ingredients

1 pack Wicks Manor Olde English Sausage
1 cup Orzo pasta
1 yellow onion, chopped
4 cloves garlic, minced
½ bell pepper, diced
1 can (400g) diced tomatoes
2 cups baby spinach
2 cups chicken broth
½ cup fresh basil, chopped
1 teaspoon dried Italian herbs
1 teaspoon paprika powder
2 tablespoons olive oil
½ cup freshly grated Parmesan
Salt & pepper to taste

Instruction:

1. Chop the sausages into 1-inch pieces.

2. Heat a pan over medium-high heat and sear the sausage pieces until nicely browned and charred on the edges.

3. Remove from the pan and set aside.

4. In the same pan, heat 2 tablespoons of olive oil over medium heat.

5. Add the chopped onion and bell pepper. Sauté until softened (about 3–4 minutes).

6. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

7. Add the orzo, diced tomatoes, chicken broth, Italian herbs, and paprika powder to the pan.

8. Fold in half of the seared sausage, reserving the other half for garnish.

9. Lower the heat, cover with a lid, and let it simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

10. Stir in the baby spinach and fresh basil, allowing them to wilt.

11. Sprinkle in the grated Parmesan, season with salt & pepper, and gently fold everything together.

12. Top with the reserved seared sausage and an extra sprinkle of Parmesan.

13. Serve warm and enjoy!
