Chinese Drunken Soy Chicken
Ingredients

1 1.6kg Whole Chicken 
1 Ginger 
4 Spring Onion
½ cup Shaoxing wine
½ cup soy sauce
1 inch cinnamon stick
2 star anise
4 cloves
1 teaspoon ground ginger powder
½ teaspoon fine white pepper
1 ½ tablespoon peanut oil or groundnut oil
Enough water to cover the chicken

From your pantry :
½ teaspoon salt

1. Using a large pan, add all the ingredients and bring it to a gentle simmer.
2. Add the chicken, breast side down. Cover and allow to gently simmer for 30 minutes. Turn the chicken over and continue to simmer for another 30 minutes.
3. Once fully cooked, remove the chicken from the pan and leave it to cool.
4. Chop the whole chicken by taking the wings and legs off. Then, cut the chicken by separating the breast part from the underside.
5. Lay underside flat on the chopping board and cut 1-inch slices apart. Then cut down the centre. Garnish with chopped spring onions.
6. To make the dipping sauce, add finely chopped ginger and spring onions into a bowl. Stir in white pepper, salt and peanut oil.
