Coconut Salmon

 

INGREDIENTS

150g Mt. Cook Alpine New Zealand Salmon Portions, Skin On (1 portion)
300ml coconut milk
Salt
Pepper
Lemon juice

METHOD
  1. Marinate the salmon fillet with coconut milk for 30 minutes and add salt and pepper
  2. Heat the oil in a skillet over medium heat and place the salmon into the hot oil.
  3. Squeeze lemon juice over the salmon and season it with salt and pepper.
  4. Baste the salmon with the leftover coconut milk and fry until the skin is crisp.
  5. Remove from the skillet and serve.
