150g Mt. Cook Alpine New Zealand Salmon Portions, Skin On (1 portion)
300ml coconut milk
- Marinate the salmon fillet with coconut milk for 30 minutes and add salt and pepper
- Heat the oil in a skillet over medium heat and place the salmon into the hot oil.
- Squeeze lemon juice over the salmon and season it with salt and pepper.
- Baste the salmon with the leftover coconut milk and fry until the skin is crisp.
- Remove from the skillet and serve.
