
Smoked trout salad with yogurt dressing - delicious with a crusty roll or wholegrain bread.
INGREDIENTS
Chalk Stream English Hot Smoked Rainbow Trout
Oak leaf lettuce (or other dark lettuce)
Tomatoes
Telegraphic Cucumber
3 tsp of white wine vinegar
2 tbs Vasse Virgin Rich & Robust Cold Pressed Extra Virgin Olive Oil
100ml of natural yogurt
1/2 tsp Vasse Virgin Margaret River Pure Honey
METHOD
- Whisk all the dressing ingredients together and set aside.
- Arrange lettuce leaves in the centre of a plate. Flake the hot smoked trout over the leaves and spoon dressing over all.
