Shepherd Pie
Ingredients
500g Woodburn Beef Mince
750g Potatoes, peeled and chopped
1 Onion, diced
1 Carrot, diced
1 Celery Stalk, diced
1 Garlic Cloves, minced
1/2 Frozen Peas
80ml Whole Milk
50g Cheddar Cheese
1 can Tomato Paste
2 tbsp butter
1 tsp Fresh Rosemary, chopped
1 tsp Fresh Thyme, chopped
1 tbsp Flour

From Your Pantry
2 tbsp Olive Oil
Salt
Pepper

Instructions :
  1. Boil the potatoes in salted water for about 15-20 minutes or until tender.
  2. Drain and mash with butter, milk, and cheddar. Season with salt and pepper, and set aside.
  3. Heat oil in a skillet over medium heat. Sauté onion, carrot, celery, and garlic for about 5-7 minutes until softened.
  4. Add the minced beef, cooking until browned. Stir in tomato paste, Worcestershire sauce, rosemary, and thyme, cooking for 2 minutes.
  5. Sprinkle flour over the mixture and stir well. Pour in beef stock, bring to a simmer, and cook for 10-15 minutes until thickened. Stir in peas and adjust seasoning.
  6. Preheat oven to 200°C (400°F). Transfer the beef mixture into a baking dish and spread the mashed potatoes on top.
  7. Optionally, sprinkle some extra cheddar or chives on top for added flavor.
  8. Bake for 20 minutes, then broil for 5 more minutes to get a crispy golden topping.
  9. Let it rest for 5-10 minutes before serving to allow the flavors to meld.
