Instructions :
- Boil the potatoes in salted water for about 15-20 minutes or until tender.
- Drain and mash with butter, milk, and cheddar. Season with salt and pepper, and set aside.
- Heat oil in a skillet over medium heat. Sauté onion, carrot, celery, and garlic for about 5-7 minutes until softened.
- Add the minced beef, cooking until browned. Stir in tomato paste, Worcestershire sauce, rosemary, and thyme, cooking for 2 minutes.
- Sprinkle flour over the mixture and stir well. Pour in beef stock, bring to a simmer, and cook for 10-15 minutes until thickened. Stir in peas and adjust seasoning.
- Preheat oven to 200°C (400°F). Transfer the beef mixture into a baking dish and spread the mashed potatoes on top.
- Optionally, sprinkle some extra cheddar or chives on top for added flavor.
- Bake for 20 minutes, then broil for 5 more minutes to get a crispy golden topping.
- Let it rest for 5-10 minutes before serving to allow the flavors to meld.
